Spice up Taco Tuesday with a yummy ( & healthy!) alternative: Quinoa Tacos! Low in fat, high in protein, & lots of delicious nutritious veggies. Best part, you can whip this meal up in 10 minutes.
1 Red Pepper
1 Yellow Pepper
Pinch of Taco Seasoning
Pinch of Pepper Jack Cheese
Step 1 Add one cup of quinoa to two cups of boiling water, simmer & stir until quinoa cooks through. Step 2 Dice up your veggies: peppers, onion & jalapeños. Step 3 Heat your skillet with coconut oil & add your veggies. Dust with taco seasoning. Step 4 When quinoa is finished cooking, add to your veggie skillet and mix it up. Step 5 Serve your fajita quinoa mix on corn tortillas or a bed of lettuce for a taco salad. Step 6 Garnish with a pinch of pepper jack cheese & diced avocado & enjoy!
